Deep in a laboratory at Adelaide University, researchers are working with something most people would toss to their chickens — wriggly black grubs. But these tiny creatures might help solve one of the biggest challenges facing the world's food supply.

Black soldier fly larvae are being tested as a way to convert agricultural waste into protein-rich food for humans. The larvae feast on leftover scraps like olive pits, grape skins from winemaking, and fermented banana skins. When harvested, their bodies become packed with protein comparable to beef or chicken, plus beneficial omega-3 and omega-6 fatty acids.

"Compared to traditional livestock, black soldier fly larvae are a highly sustainable protein source with a low environmental footprint," said PhD researcher Sam Mallard. "They require very little space, don't produce methane like cattle, and they're very easy to farm."

The research matters because global protein demand is expected to surge by up to 70 percent by 2050 as the world's population grows. Finding new ways to feed people without overwhelming the planet has become urgent.

Partners in the project include Australian Superintendence Company, Mobius Farms, and Fly Farm Australia. Together with Adelaide University, they're investigating whether the larvae can safely transform agricultural byproducts — stuff that would otherwise end up in landfills — into something nutritious.

Food safety is a central concern. Because the larvae eat organic waste, researchers are carefully tracking potential contaminants like heavy metals, pesticide residues, and natural toxins. "If this protein is to be considered for human consumption, food safety is absolutely paramount," said principal investigator Dr. Permal Deo. "We want to produce a protein that is high quality, safe and something that consumers can trust."

The work is generating data that could help establish national testing standards and industry guidelines for insect-based proteins in Australia. While Australians may not see whole grubs on supermarket shelves anytime soon, processed powders mixed into other foods could be closer to reality. Such ingredients could find their way into protein bars, pasta, or supplements, offering a sustainable alternative to traditional protein sources.

"Exploring alternative sources helps build resilience into the way we feed people," Mallard said. The humble black soldier fly larva, it seems, might quietly become a food of the future.
